Paneer cauliflower rice

INGREDIENTS FOR PALAK PANEER :

Spinach 150g
Onion 100g
Garlic 2-3 cloves
Ginger 1 inch grated
Chilli paste 1 tsp
Fenugreek powder 1/2 tsp
Turmeric 1/4 tsp
Garam masala 1 1/2 tsp
Asafoetida (Hing) 1 pinch
Heavy cream 1/2 cup
Paneer 100g
Cumin seeds 1 tsp
Butter 3 tsp
Salt to taste
Lemon juice to taste

INGREDIENTS FOR CAULIFLOWER RICE :

Cauliflower 150g
Salt to taste
Butter 1 tsp

PROCEDURE FOR PALAK PANEER
– Steam the spinach for 2 minutes till its soft then and to ice cold water for 10 secs. Drain the water and keep the spinach aside.
– In a pan heat butter. Add cumin seeds and asaefotida and let them splutter.
-Next add chopped onion, garlic and ginger. Sauté till the onions turn translucent.
– Now add all the dry spices and salt along with the spinach.
– Add paneer cubes. Mix well till the mixture coats the paneer well.
– lastly add heavy cream and lemon juice and let it cook for 2 mins.

PROCEDURE FOR CAULIFLOWER RICE
– Take Cauliflower and cut it into small florets.
-Add the florets to a mixer or food processor (grater setting) and pulse till the caulifower turns grainy. Do not grind into very small grains.
– Take 1 tsp butter in a pan and add the caulifower to it.
– Add salt and saute till cauliflower turns soft and slightly brown.
– Serve in a plate topped with palak paneer.
